Config Emails 4 Zen/apache

I need someone to configure my apache server’s email function or to give me directions and ideas on what to do for two websites using zencart, and one not using zencart, all on the same server.
The apache bundle I have is running xmail, a program I have found useless since I have no clue on how to log in.
I have 2 websites using Zencart, the latest edition. I can’t connect to the smtp server for some reason, in this case, gmail.
I’ve tried all the options for email transport. Sendmail says it works but fails to actually do anything.
I also need this configured for another script, not Zen. This one, relies on PHP transport, but unlike Zen, does not allow the option for other types.
MANDATORY: I need you upon successful completion, to let me know EXACTLY what you did to make the emails work. The reason is, backing up the files, is not always the solution. Also, settings may change for pop3, and imap from outside email providers.
